Gluten Free Recipes using Healthy Herbs

Crepes

4 eggs 1 ½ cups GF all purpose flour 1 tsp salt 1 ½ cups milk 4 TB melted butter Beat eggs well. Add flour, salt, milk and butter, mix with wire whisk until smooth. Heat a large skillet, or crepe pan. Spray with cooking spray, or a dab of butter, and pour 1/4-1/3 cup batter in the middle of pan. Holding the handle of the pan, roll the batter around to make a large circle. Watch closely. When the entire top looks slightly firm, bubbly, turn the crepe over and cook for briefly.

To serve: spread 2 TB of your favorite jam, warmed. With your fork, roll crepe, then sprinkle with powdered sugar.

Variations: add pudding, or whipped flavored cream cheese, in the middle with whipping cream on top of rolled crepe for a delightful dessert.

*Helpful Hint: Stir the batter in between each crepe you make to keep it from separating.

To add inside the crepe

1/2 cup of fresh Dandelion green leaves

1/2 cup of spinach

1 tsp on fresh chives

1/2 cup of shitake mushrooms

tomatoes sauteed in basil leaves

goat cheese to garnish

add a clove of crushed garlci to the mix

sea salt & black pepper

garnish with strawberries on top of rolled up crepe

Southern Biscuits

In large mixing bowl stir together: 1 cup almond or coconut flour, 1 cup GF all purpose flour 1 ½ tsp xanthum gum 1 TB baking powder 2 tsp sugar ½ tsp cream of tarter ¼ tsp salt Cut in: ½ cup butter until crumbly Add: ¼ cup applesauce 2/3 cup almond milk Stir until moistened. Form dough into ball. Sprinkle board with GF flour. Press dough into circle about ½ inch thick. Cut out biscuits with biscuit cutter or the rim of a cup. Place 1” apart on ungreased cookie sheet.

1/2 tsp on cayenne pepper

1 tsp of fresh parsley

2 tsp of fresh chives

1/4 tsp of fresh garlic

1/4 tsp oragano

1/2 cup of shredded cheese

Add Herbs and cheese last into the mix then bake 450 degrees for 8 minutes

  • Heat a large skillet over medium-high heat. Cook and stir cut sausage in the hot skillet until golden brown, for 6- 7 minutes
