A Mouth Watering Broccolini Side Dish!

Roasted Broccolini with Wine Vinaigrette, Parmesan and Mushrooms and Onions
1 pound of Broccolini
One small onion
2 Tbsp Olive Oil
White Wine
Vinegar
Salt to taste
Pepper to taste
Parmesan to toss over the dish
Chefs and patrons around the world love broccolini! Though many of us don't often buy it, it should be considered a vegetable of choice. It is has a great sweet taste and can be used with a wide variety of other dishes. Aesthetically, dressing it up among other brilliant and colorful veggies will certainly enhance presentation.
First, place the broccolini in the baking sheet and drizzle some olive oil, add salt and pepper. Place it in the oven (15 mins at 400 degrees). Turn the broccolini several times until it exhibits a nice golden color.
Then place in a large pan, add 2 Tbsp olive oil (organic, extra virgin, of course), and place it on medium heat. Add the sliced onions to the pan and cook it for 5 minutes. Next, add the mushrooms and mix until the onions and mushrooms are browned (Approx. 8-10 mins).
When the mushrooms are golden brown add a few teaspoons of vinegar (to taste) and a splash or two of white wine (or more, if you like). Next, add sea salt, black pepper and top it off with as much Parmesan as you want! Throw some brightly-colored veggies on the dish (we prefer seasonal peppers, tomatoes and purple olives) and enjoy!
